VANILLA CUPCAKES







something that I can honestly say I hate is boredom. I can't stand that feeling of nothing to do. That feeling of laziness. Boredom drains me from the inside out and prepares me for a bad day. This was the whole school week for me. From the moment my obnoxious alarm cloak that I come close to throwing out my window and into the bushes praying to god it brakes (yes those are the dreams I have.) Until the last bell goes off on friday at 2:30 in the afternoon. I must say that bell is one of the best sounds I have ever heard. Don't get me wrong I really do love school and I love to learn but it can get to me every now and then. This week was full of vocabulary words, William McKinley (the only highlight of my week because the school on glee is named after him), conjugating to many spanish verbs to think of, four different type of angles and how to find there measurement, and finding the volume of an object using a number of different devices.
I just spent a good amount of my time complaining about my life this week when there are people out there who are praying for the life I have. There are people out in this world who are starving or who are sick with a deadly disese and the only thing I can complain about is a bad week at school. I realized this as I was about to put the icing on these vanilla cupcakes and a news segment about a family struggling with a mother/wife/sister/daughter going through breast cancer. I saw how brave and strong this women was and wished I could be her. She did not complain about her sickness once and I praise that. I immediatly took out the pink food coloring and mixed it with the vanilla icing in honor of breast cancer awarness month. So you may think that me posting vanilla cupcakes and vanilla icing is very boring (or you may not? :D) but keep in mind what other people might be going through and what you have.

Vanilla cupcake recipe/directions

* 1 3/4 cups cake flour


* 1 1/4 cups all purpose flour


*2 cups sugar (I used a little less then two cups)


* 1 tablespoon baking powder


* 3/4 teaspoon salt


* 1 cup (2 sticks) unsalted butter, softened and cut into tablespoons (I just estimated a tablespoon)


* 4 large eggs at room temp.


* 1 cup whole milk (I just used whatever milk I had in the fridge and they still tasted great!)


* 1 teaspoon pure vanilla extract
DIRECTIONS:
Preheat oven to 325 degrees. Line cupcake pans with paper liners; set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine flours, sugar, baking powder, and salt; mix on low speed until combined. Add butter, mixing until just coated with flour.
In a large measuring cup, whisk together eggs, milk, and vanilla. With mixer on medium speed, add wet ingredients in 3 parts, scraping the sides of the bowl, with each addition; beat until ingredients are incorporated but do not overbeat.
Divide batter evenly among liners, filling about 2/3 full. Bake, rotating pans halfway through, until a cake tester( I used a tooth pick;D) inserted in the center comes out clean, 17 to 20 mins. Transfer to a wire rack to cool completely.
I iced these with a vanilla icing and added a little bit of red food coloring so it would come out pink.
SIMPLE VANILLA ICING:

2 cups sifted powdered sugar
4 tablespoons butter or margarine, melted
2 to 4 tablespoons milk or water
1 teaspoon vanilla extract
Combine all ingredients with enough milk or water to the desired consistency, less milk for a thicker consistency, more for a thinner.
Its that easy! These cupcakes were really deliscious and perfectly moist! I really enjoyed them and I hope you enjoyed this post. Sorry again about the pictures! I'll try to figure that out.

  1. Hi.. I had the same problem with the pics... what worked for me was to put the cursor to the left under the pic and hit enter. Just make sure of 2 things, when you hit enter is not part of writing a caption on the pic and that there is enough space under the pic for the new one, which is why I hit enter... hope it works. Love the background!!! By the way Im new to blogging to ;)
